Mexico - Eight Courses of Delicious and Beyond

Baja Mexico is fabulous in February.

Creating a sense of community is often a challenge for a virtual company. That’s why v-Fluence holds two annual meetings, both of which are designed to foster creativity, community and professional growth. Team-building plays a major part, as well. I just returned from my first one, Camp v-Fluence, a three-day training and professional development outing; this year, it was held in Ensenada, Mexico. For me, it was the first time meeting several of my co-workers, all of whom shared presentations that focused on professionaldevelopment, or industry trends, and/or v-Fluence products and services. I was blown away, both by the team’s collective knowledge and the meeting location itself.

For many of us, including me, this was our first trip to Mexico, and we enjoyed the entire Saturday exploring, some as part of planned activities and some on our own.

The highlight for me: a day trip into Baja wine country. The warm weather and fantastic wine were a welcome change from Chicago in February with its snow and grey skies. We then headed to Laja restaurant, which looked, initially, like a simple house or old church, back-dropped by the beautiful Baja countryside. Inside this unassuming restaurant awaited a little bit of heaven. We spent close to four hours there, complete with a refreshing eight-course meal, impressive in its subtle flavors and perfect portion sizes. It was the most delicious array of wine and food pairings I have ever experienced. I did some research after returning home, and it turns out that I’m not alone in my opinion, as the restaurant has been well reviewed by many others. I plan on returning.

Later that day, a group of us made our way to downtown Ensenada where we found a pleasant blend of small city charm and tourism. Many of the shopkeepers spoke English, and their wares were reasonably priced.

When I left Chicago for this trip, I wasn’t sure what to expect. It turns out that Ensenada, as a destination, and v-Fluence, as a company, are perfect matches for me. Bright, warm, welcoming and memorable to the last.
